Basically, there's no one specific answer, it depends on specific release and specific download. Sometimes you have to copy files and other times there's a specific update installer that installs the update on top of the game just like the game installer would (basically copies files automatically without you having to do it manually). The same thing about how updating games works, it depends. This stuff depends on specific cases and usually you can find this info in description where you're downloading it or in readme files that come with the installation. The same thing with updates from one group or one repack author working with other versions, sometimes it works sometimes it doesn't. It should usually tell you in info section of a download whether the update contains all previous updates and can be applied to any version or not. Other times there may not be any separate updaters available and you have to download and reinstall the whole game (usually for repacks but not always) with the latest updates. Sometimes the update file itself contains all previous updates, other times it only contains the latest update stuff and you already have to have all previous versions installed.
